The Menu

Today, you can't open a Menu that doesn't offer "freshly-prepared, organic dishes" but the proof of the pudding is in the eating, as one's mother might say. And our salad leaves and vegetables do really come from the Setfords Fletching market-garden, and the fish really is fresh-out-of-the- sea, brought up daily by Paul Hodges from his own boat at Rye. Likewise venison, game and beef from local farmers, David Hollings and Tony Salter, all of whom are now personal friends. But we don't put all this information on the Menu - the customers judge for themselves.

The Wines

We choose our wines from mostly small producers, who are committed to the highest quality. Hence you will see very few, if any, of our wines in high street shops or supermarkets.

We also like to choose wines from regions that are not always the most widely known - we try and avoid the obvious! Having said that, we do have several examples of the best known wines from France, in particular, Sancerre, Fleurie and Chablis; but each of these has been carefully selected to be a fine example of their region.

Though we list wines from most of the main wine-producing countries, if we have a particular favourite it is Italy, where the enormous diversity of climate, soil and grape variety gives a fascinating scope for interesting and delightful choices - and at very reasonable prices. We would encourage you to try our Italian range - you will not regret it!
